Cheaters Sesame Chicken
INGREDIENTS

2 pounds chicken breast meat - cubed

2 tablespoons toasted sesame seeds
Coating

2 generous tablespoons all-purpose flour

2 generous tablespoons cornstarch

1/2 teaspoon baking soda

1/2 teaspoon baking powder

4 tablespoons soy sauce
-
4 tablespoons water
-
2 teaspoon vegetable oil

Dash of sesame oil
Sauce
-
1 cup water
-
1/4 cup sugar
-
Juice from 1/2 lemon
-
2 tablespoons soy sauce
-
2 tablespoons sesame oil

Chile flakes
-
1 clove garlic, minced

Cornstarch slurry (1 generous tablespoon cornstarch into 1/2 cup of water)
DIRECTIONS

Sift flour, tablespoons cornstarch, baking soda, and baking powder into a bowl. Pour in soy sauce, water, vegetable oil, and a dash of sesame oil; stir until smooth. If it looks too dry to you add water till desired consistency. Stir in chicken until coated with the batter, then cover, and refrigerate for 20 minutes.

Meanwhile, bring water, sugar, lemon juice, soy sauce, sesame oil, chile flakes, and garlic to a boil in a saucepan over high heat. Dissolve 1 generous tablespoon cornstarch into 1/2 cup of water, and stir into boiling sauce. Simmer until the sauce thickens and turns clear, about 2 minutes.

Bake chicken in the oven on 400°F convection mode for 15 min, then turn over, add souce and bake another 15 min or until ready.

Sprinkle with toasted sesame seeds and green onions to garnish.
